The Journey Begins In January 2012, I set out on an extraordinary adventure - to eat only whole, unprocessed foods for an entire year. Living in a small apartment with no garden plot, I faced numerous challenges as I sought to understand the true meaning of "unprocessed" and its significance in my life. I began by milling my own wheat, extracting salt from seawater, and even slaughtering a sheep.
